Chocolate Avocado Pudding with Roasted Strawberries & Pistachios

This silky chocolate pudding gets its creamy texture from avocado and natural sweetness from maple syrup. Finished with roasted strawberries and pistachios, it’s a vegan, dairy-free, and gluten-free dessert that feels indulgent while staying wholesome.

Ingredients4 servings

Pudding

  • 2 large ripe avocados
  • 1/3 cup unsweetened plant-based milk
  • 1/4 cup raw cacao powder
  • 1/4 cup maple syrup or honey (non-vegan)
  • 2 tsp vanilla extract
  • 1/4 tsp salt

Topping

  • 2 cups strawberries, washed, hulled and sliced
  • 1/4 cup raw pistachios, shelled and chopped
  • 1/4 cup mint, sliced
  • 2 Tbsp balsamic vinegar
  • 2 tsp avocado oil

Directions

Preheat oven to 375°F. Line a sheet pan with parchment paper. Set aside Remove pit and scoop flesh from avocados into a blender or food
processor. Add cacao powder, sweetener, milk, vanilla extract, and salt. Process until completely smooth, scraping down sides as needed. Transfer to refrigerator for at least 30 minutes.

On prepared sheet pan, toss strawberries with balsamic vinegar and avocado oil. Spread into a single layer and roast 20 minutes. Allow to cool slightly.

Divide pudding into bowls and top with roasted strawberries, pistachios, and fresh mint.

Note: Dairy milk works well too, if preferred.

    VERY yummy! First, I used very ripe avocados and a good bourbon vanilla extract. I blended all the ingredients in a bowl with a hand mixer using the highest speed, turning the bowl and scraping to insure all ingredients were blended to a smooth consistency. I did not have time to roast the strawberries so I cut them up and tossed separately with an aged Balsamic and topped the pudding with the Balsamic strawberry mixture and chopped pecans. Truly a delicious treat 😋

    I did all the measurments correctly, even added in some extra honey, but it literally looked like barf. It was so bad that when i finally brought myself to try it, I almost hurled. Nobody in my family enjoyed the taste in the slightest. This recipie should be modified because it was just down-right disgusting for a recipie that was completely done correctly.

    We pretty much have all these ingredients so don’t need to shop for them. Healthy dessert option. My guess is that it could keep refrigerated for 2 or 3 days as well. Mmm.

      Any 100% unsweetened cacao powder works great here—just make sure it has no added sugar or additives. Organic is a nice bonus 😊
